NUTRITION OF SWEET POTATO

The sweet potato was introduced to this country over 300 years ago.  It has now become the most commonly cultivated staple food crop in Papua New Guinea.

Annually about 520,000 metric tons of sweet potato are produced around the country. It is best consumed within 2-3 weeks. As flour it can be stored for 6 -12 months as 87% of water has been removed.

Mixing sweet potato and wheat flour can boost the nutritional value, Sweet potato especially the orange fleshed variety are rich in nutrients like beta-carotene and vitamins A,C and E.

Sweet potatoes contain essential fibres and magnesium that can prevent or manage many health conditions such as diabetes, depression, heart disease, arthritis and cancers.

Vitamins in sweet potatoes can improve hair, skin, vision and digestion.
